Vegan Loaf

Vegan Loaf
Pre-heat oven @ 350 degrees
In a large bowl, mix: 
2 cups of flour (recommended organic unbleached) 
2 table spoons of baking powder 
1 cup of brown sugar 
2 cups of almond milk 
2 carrot grated 
1 apple grated 
1 zucchini grated
1/2 cup of  veg/olive oil
Add nutmeg and cinnamon as desired  
Preparation:
Pour ingredients into 2 lightly greased baking pans
Bake for 30 mins or until loaf is golden brown and cooked on the inside

BAKER'S HINT: You will know that your loaf is ready by performing the following test.
Use a butter knife to penetrate the center of loaf. If knife appears wet with mixture allow to bake for an additional 10 mins, then repeat test.
